Chicken Parmesan over Alfredo Noodles

What you need:

For Chicken:

  • 2 Chicken Breasts
  • 1/4 cup flour
  • 2 eggs
  • 1 cup Panko Italian Seasoning bread crumbs
  • 1/2 cup grated Parmesan Cheese
  • 3 tablespoons of freshly chopped parsley
  • 1/2 cup of oil (of your choice)
  • 1 can of marinara
  • 1 tablespoon of seasoning salt
  • 1 teaspoon of garlic powder
For Homemade Alfredo Sauce:
  • 1/2 cup butter
  • 2 cups of heavy whipping cream
  • 1 tablespoon of minced garlic
  • 2 cups of Parmesan Cheese
  • 1/2 teaspoon of sea salt
  • 1/3 teaspoon of black pepper
  • 1/2 teaspoon of seasoning salt
  • 1 tablespoon of Italian Seasoning
Prepare enough noodles for 2-4 servings. Add 1 tablespoon of butter and 1/2 tablespoon of Italian seasoning to finished noodles.

Directions

1. Preheat oven to 425°F. Begin to boil water for noodles. Put thin layer of oil in pan to cook chicken once breaded. You will need 3 shallow bowls, one for flour, one for egg wash, and one for bread crumb/grated Parmesan mixture. Add garlic powder to flour. Add freshly cut parsley to bread crumb/grated Parmesan mixture.
2. Pound out chicken breast to about 1/2 inch thickness. Coat first in flour, then egg, then Parmesan crust coating. Place in skillet and cook for 4 minutes total, 2 minutes on each side.
3. Add marinara to 9×13 inch pan. Place chicken in pan on top of marinara. Let back for 20 minutes or until chicken reaches an internal temperature of 165°F.
4. Add noodles to boiling water. Let cook to desired texture. Drain. Season with 1 tablespoon of butter and Italian seasoning.
5. Add I stick or 1/2 cup of butter to a skillet. Add heavy whipping cream. Cook for 2 minutes. Add salt, pepper, seasoning salt, and Italian seasoning. Add Parmesan cheese. Let cook until all ingredients have fully dissolved.
6. Remove chicken from oven and serve! I plate it up with Alfredo noodles as base, then Alfredo sauce on top, then chicken, and top with marinara sauce and fresh parsley to garnish.
